KAYSERİ MANTISI
INGREDIENTS
For the dough:
4.5 glasses of flour
1 egg
1 glass of water
1 teaspoon of salt
For filling ingredients:
350 g low-fat ground beef
2 onions
1 teaspoon of ground red pepper
1 teaspoon of black pepper
1 teaspoon of salt
For the mantı sauce:
2 tomatoes
2 green peppers
3 tablespoons of butter
1 tablespoon tomato paste
1 teaspoon of ground red pepper
1 teaspoon of salt
For the above:
2 glasses of yoghurt
2 cloves of garlic
Mix the eggs, water, and salt, add the flour little by little, knead it until you have a hard dough without smoothing, and let it rest for 30 minutes.
Finely chop the onions. Add onion, ground red pepper, black pepper, and salt into the minced meat and mix.
Make three meringues from the dough.
Roll out the meringues in the size of pastry with a rolling pin.
Cut 1 cm wide strips and prepare 1cm square mantı from the cut strips.
Put the mixture of filling ingredients in the middle of the mantı dough.
Close the dough with opposite corners facing each other.
Repeat the same process for the other 2 meringues.
Put the butter in a pot, roast the finely chopped green peppers.
Add tomato paste, salt, red pepper powder to the roasted pepper and cook for another 1-2 minutes.
Finally, add the finely chopped tomatoes and cook for 10 more minutes and prepare the sauce.
Add mantı in boiled salted water and cook.
Drain the cooked ravioli. Set aside 3 glasses of filtered water and boil it by pouring it into the sauce you prepared.
Mix the mantı in the sauce and cook for a few more minutes and put it on the plate.
Serve by pouring garlic yogurt sauce on it.
